How Does LJ Keep Time?

I’m not sure I get how LiveJournal keeps time:

If 7:58 was 1 hour ago, wouldn’t it now be 8:58? So how could the next check be a half hour ago? I don’t get it.

Made meatballs last night. Lessons learned:
- Form your meatballs before putting them in the pan to brown.- Brown in a separate pan than your saucepan so you have more room.- Keep the heat on medium, not high when browning.- Cover the pot after adding tomato sauce.
